1️⃣ Prepare the Cake Batter
Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
In a bowl, whisk together flour, baking powder, and salt.
In another bowl, beat sugar, eggs, and vanilla extract until fluffy. Add the melted butter and mix well.
Gradually add the dry ingredients, alternating with milk, mixing until smooth.
Divide the batter into four bowls and color each with a few drops of pastel food coloring.
Pour each color layer by layer into the cake pans for a rainbow effect. Swirl lightly with a skewer for a marbled look.
Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
Let the cakes cool completely before frosting.
2️⃣ Make the Buttercream Frosting
In a large bowl, beat butter until creamy.
Gradually add powdered sugar, mixing well.
Add vanilla extract and heavy cream. Beat until smooth and fluffy.
Divide into three small bowls, coloring each portion with pink, purple, and blue for the unicorn’s mane.
3️⃣ Assemble & Decorate the Unicorn Cake
Place one cake layer on a serving plate and spread white buttercream frosting evenly.
Stack the second layer on top and cover the entire cake with a smooth coat of white frosting.
Use a piping bag with a star tip to create swirls of pink, blue, and purple buttercream for the unicorn’s mane.
Attach the golden fondant horn in the center and place the fondant ears on either side.
Add edible pearls or sprinkles for extra magic!
