Ingredients
  

  • 2 cups short-grain sushi rice cooked
  • 2 tbsp rice vinegar
  • 1 tbsp sugar
  • 1/2 tsp salt
  • 1 lb cooked or fresh salmon flaked
  • 1/4 cup mayonnaise
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 1 tsp sriracha optional, for spice
  • 1/4 cup cream cheese softened
  • 2 green onions chopped
  • Nori sheets for serving
  • Toasted sesame seeds for garnish

Instructions
 

Prepare the Sushi Rice:

  • Cook the sushi rice according to package instructions.
  • While warm, mix in rice vinegar, sugar, and salt. Let cool slightly.

Make the Salmon Topping:

  • In a bowl, mix flaked salmon with mayonnaise, soy sauce, sesame oil, sriracha (if using), and cream cheese.

Assemble & Bake:

  • Spread the sushi rice in a baking dish.
  • Top with the salmon mixture, spreading evenly.
  • Bake at 400°F (200°C) for 20 minutes or until golden and bubbly.
  • Garnish with green onions and toasted sesame seeds. Serve with nori sheets.

Notes

  • Swap salmon for crab, shrimp, or tofu for variety.
  • For extra crunch, add crushed tempura flakes before baking.
  • Serve with soy sauce, spicy mayo, or eel sauce for extra flavor.
