  • 2 cups elbow macaroni
  • 2 cups shredded Pepper Jack cheese
  • 1 cup shredded Cheddar cheese
  • 1 cup milk
  • 2 tbsp butter
  • 1 tbsp all-purpose flour
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper optional for extra spice
  • 1/2 tsp garlic powder
  • Salt & pepper to taste
  • 1/2 cup breadcrumbs optional for topping
  • 1 tbsp chopped jalapeños optional for extra heat

Instructions
 

  • 1️⃣ Cook the macaroni: Boil water, add a pinch of salt, and cook macaroni according to package instructions. Drain and set aside.
  • 2️⃣ Make the cheese sauce: In a saucepan over medium heat, melt butter and stir in flour. Cook for 1-2 minutes until golden.
  • 3️⃣ Add the milk: Slowly pour in the milk while whisking continuously to create a smooth mixture.
  • 4️⃣ Melt the cheese: Reduce heat to low and stir in Pepper Jack and Cheddar cheese. Keep stirring until fully melted.
  • 5️⃣ Season it up: Add paprika, garlic powder, cayenne pepper (if using), salt, and pepper. Mix well.
  • 6️⃣ Combine pasta and sauce: Pour the cheese sauce over the cooked macaroni and stir until evenly coated.
  • 7️⃣ Optional crispy topping: Transfer to a baking dish, sprinkle breadcrumbs, and broil for 2-3 minutes until golden.
