Ingredients
  

Main Ingredients

  • 2 lbs Beef tripe Cleaned and cut into strips
  • 1 lb Beef brisket Cut into chunks
  • 3 cups Hominy Canned or pre-cooked

Broth Ingredients

  • 10 cups Water or beef broth For cooking the meat
  • 4 cloves Garlic Minced
  • 1 large Onion Chopped
  • 3 oz Dried chili peppers Such as guajillo or ancho
  • to taste Salt For seasoning

Preparation

  • Clean the beef tripe thoroughly under cold water. Soak it in vinegar or lemon juice for an hour to neutralize the smell. Trim excess fat from the brisket.
  • Boil the meat in a large pot with water for 10-15 minutes. Discard the water and rinse the meat again.
  • Cut the tripe into bite-sized strips and the brisket into small chunks.

Cooking

  • In a large pot, sauté garlic, onions, and dried chili peppers until fragrant.
  • Add the prepared meat to the pot and cover with water or broth. Simmer for 2-3 hours for tripe and 1.5-2 hours for brisket until tender.
  • Add hominy during the last 30 minutes of cooking.

Notes

Menudo is often served with lime wedges, chopped onions, and cilantro. Adjust the spice level to your preference. It's a great dish for family gatherings and special celebrations.
