For the crust:
- 1 ½ cups all-purpose flour
- ½ cup unsalted butter melted
- ¼ cup granulated sugar
- ¼ teaspoon salt
For the filling:
- 2 large eggs
- ¾ cup granulated sugar
- 2 tablespoons all-purpose flour
- ⅓ cup freshly squeezed lemon juice
- 1 teaspoon lemon zest
- 1 cup fresh or frozen blueberries
Make the Crust:
In a mixing bowl, combine flour, melted butter, sugar, and salt.
Press the mixture evenly into the prepared pan.
Bake for 15 minutes or until lightly golden.
Prepare the Filling:
In another bowl, whisk together eggs, sugar, flour, lemon juice, and lemon zest until smooth.
Gently fold in the blueberries.
Assemble & Bake:
Pour the filling over the warm crust.
Bake for 20–25 minutes, or until the center is set.
Let cool completely before slicing.
