For the Grilled Chicken:
- 2 boneless skinless chicken breasts
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp smoked paprika
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp dried thyme
- Juice of ½ lemon
For the Sweet Potato Mash:
- 2 large sweet potatoes peeled and cubed
- 2 tbsp butter or olive oil for a dairy-free option
- ¼ cup milk or almond milk for dairy-free
- ½ tsp cinnamon
- ½ tsp salt
- ¼ tsp black pepper
1️⃣ Prepare the Sweet Potatoes
Boil sweet potatoes in a pot of salted water until fork-tender (about 15 minutes).
Drain and mash with butter, milk, cinnamon, salt, and black pepper until smooth.
2️⃣ Grill the Chicken
In a bowl, mix olive oil, garlic powder, paprika, salt, pepper, thyme, and lemon juice.
Rub the seasoning mixture over both sides of the chicken.
Heat a grill or grill pan over medium-high heat and cook the chicken for 6-7 minutes per side, or until fully cooked (internal temperature of 165°F).
3️⃣ Serve
Plate the grilled chicken with a generous scoop of sweet potato mash.
Garnish with fresh herbs or an extra squeeze of lemon if desired. Enjoy!
- You can bake the chicken at 400°F (200°C) for 20-25 minutes instead of grilling.
- Add a drizzle of honey to the sweet potatoes for extra sweetness.
- Serve with steamed greens for a complete meal.
