  • ½ cup Soy Sauce Use a high-quality soy sauce for the best taste.
  • 1 tablespoon Sugar White or brown sugar works; brown adds a deeper flavor.
  • ¼ cup Water Adjust based on your desired consistency.
  • 1 clove Garlic (minced) Fresh garlic for a bold, aromatic touch.
  • ½ teaspoon MSG (optional) Adds umami, but you can skip if preferred.
  • 1 teaspoon Tamarind Paste Optional, for a tangy kick that mimics the complexity of store-bought versions.
  • ½ teaspoon Cornstarch To slightly thicken the sauce.

Preparation

  • In a small saucepan, mix the soy sauce, sugar, and water. Stir well to ensure the sugar begins to dissolve.
  • Add the minced garlic and tamarind paste (if using) to the saucepan.
  • Place the saucepan over low heat and bring the mixture to a gentle simmer. Stir continuously to prevent the sugar from burning.
  • In a separate small bowl, mix the cornstarch with a tablespoon of water to make a slurry and slowly add this to the simmering sauce.
  • Let the sauce simmer for 2-3 minutes. Taste and adjust sweetness or saltiness as desired.
  • Remove the sauce from heat, let it cool, and strain through a fine mesh for a smoother texture.
  • Store the sauce in a clean, airtight jar or bottle in the fridge.

Notes

For a spicy version, add crushed chili flakes. For gluten-free, use tamari instead of soy sauce.
