Ingredients
  

  • 1 lb boneless skinless chicken breast or thighs
  • 2 cups mixed vegetables carrots, potatoes, onions
  • 2 cloves garlic minced
  • 1 cup chicken broth
  • 1 tbsp tomato paste
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions
 

  • Brown the Chicken: Sear the chicken in a pan for extra flavor (optional).
  • Sauté the Vegetables: Lightly cook onions, carrots, and potatoes until slightly softened.
  • Layer Ingredients in Crockpot: Place chicken at the bottom, followed by vegetables, and pour in the chicken broth. Add tomato paste, garlic, thyme, salt, and pepper.
  • Slow Cook: Cook on LOW for 6-8 hours or HIGH for 3-4 hours until the chicken is tender.
  • Make the Gravy: Remove chicken, mash some vegetables into the broth to thicken, or mix a cornstarch slurry (1 tbsp cornstarch + 2 tbsp water) for a thicker gravy.
  • Serve: Shred or slice the chicken and mix with the rich gravy. Serve over mashed potatoes, rice, or roasted vegetables.

Notes

  • For extra flavor, use bone-in chicken instead of boneless.
  • Prefer a creamier texture? Add ½ cup heavy cream or milk at the end.
