  • 12 ounces elbow macaroni or any pasta of choice
  • 3 tablespoons unsalted butter
  • 3 tablespoons all-purpose flour
  • 2 cups whole milk warm
  • 1 cup heavy cream
  • 1 teaspoon Dijon mustard
  • 2 cups Havarti cheese shredded
  • 1 cup sharp cheddar cheese shredded (optional, for extra flavor)
  • Salt and pepper to taste
  • Optional topping: 1 cup breadcrumbs mixed with 2 tablespoons melted butter

Instructions
 

Cook the Pasta:

  • Boil the pasta according to package instructions until al dente. Drain and set aside.

Make the Roux:

  • In a large saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes until it forms a smooth paste. This removes the raw flour taste.

Add the Milk and Cream:

  • Gradually pour in the warm milk and cream, whisking constantly to avoid lumps. Cook until the mixture thickens, about 3-5 minutes.

Add the Cheese:

  • Stir in the Dijon mustard, then add the shredded Havarti cheese (and cheddar, if using). Whisk until the cheese is completely melted and the sauce is smooth. Season with salt and pepper to taste.

Combine Pasta and Sauce:

  • Add the cooked pasta to the cheese sauce, stirring until evenly coated.

Optional Baking Step:

  • Transfer the mac and cheese to a greased baking dish. Top with the buttered breadcrumbs and bake at 375°F (190°C) for 10-15 minutes until golden and bubbly.
