Ingredients
  

  • 2 ciabatta rolls or rustic sandwich bread
  • 1 chicken breast or 150g shredded rotisserie chicken
  • 2 slices of Havarti cheese
  • 1 tbsp olive oil
  • 1 tsp butter for toasting the bread
  • ½ tsp smoked paprika
  • ½ tsp garlic powder
  • Salt and black pepper to taste
  • 1 tbsp honey mustard or classic mustard
  • 1 tbsp mayonnaise
  • ½ ripe avocado mashed (optional, for extra creaminess)
  • 2 lettuce leaves
  • 2 tomato slices

Instructions
 

  • Prepare the Chicken 🐔
  • If using a fresh chicken breast, slice it in half horizontally for quicker cooking.
  • Season with smoked paprika, garlic powder, salt, and pepper.
  • Heat olive oil in a pan over medium heat and cook the chicken for 3-4 minutes per side until golden brown and fully cooked.
  • If using shredded rotisserie chicken, reheat it lightly in the pan with 1 tsp of olive oil.
  • Toast the Bread 🥖
  • Heat a pan over medium heat.
  • Spread butter on the inside of the rolls and toast them for 1-2 minutes, until slightly golden and crispy.
  • Assemble the Sandwich 🥪
  • Spread mayonnaise and honey mustard on the toasted bread.
  • Layer lettuce, tomato slices, and mashed avocado (if using).
  • Place the hot chicken on top and immediately add Havarti cheese slices so they start melting.
  • Cover with the other half of the roll.
  • Serve and Enjoy! 🤩
  • Slice in half and serve warm.
  • Pairs perfectly with sweet potato fries, a fresh salad, or a bowl of soup.

Notes

  • For extra flavor, add caramelized onions or crispy bacon.
