Ingredients

  • 8 slices of thick-cut brioche bread
  • 4 large eggs
  • 1 cup whole milk
  • 1/2 cup granulated sugar
  • 1 tablespoon ground cinnamon
  • 1/4 cup unsalted butter melted

Instructions

  • Preheat a non-stick skillet or griddle over medium heat.
  • In a shallow bowl, mix the sugar and cinnamon.
  • In another bowl, whisk the eggs and milk.
  • Dip each slice of brioche into the egg mixture.
  • Place cinnamon sugar in the center of 4 slices, then top with the remaining slices to form sandwiches.
  • Brush skillet with melted butter and cook sandwiches for 3–4 minutes per side until golden and crispy.
  • Roll warm sandwiches in remaining cinnamon sugar.
  • Serve hot with maple syrup or honey if desired.

Notes

For an extra indulgent version, try stuffing with cream cheese or Nutella before cooking
