For the Crust:
- 1 ½ cups graham cracker crumbs
- ¼ cup granulated sugar
- 5 tbsp melted butter
For the Cheesecake Filling:
- 16 oz cream cheese softened
- ¾ cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- ½ cup heavy cream
For the Brûlée Topping:
- ¼ cup granulated sugar for caramelizing
1️⃣ Preheat oven to 325°F (165°C). Line a springform pan with parchment paper.
2️⃣ Prepare the crust: In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press evenly into the bottom of the pan. Bake for 8 minutes, then let cool.
3️⃣ Make the cheesecake filling: Beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in vanilla and heavy cream. Pour over the crust.
4️⃣ Bake: Place the pan in a water bath (a larger baking dish filled with hot water) and bake for 50-60 minutes, until the edges are set but the center is slightly jiggly.
5️⃣ Chill: Let the cheesecake cool completely, then refrigerate for at least 4 hours (overnight is best).
6️⃣ Brûlée topping: Before serving, sprinkle ¼ cup granulated sugar evenly on top. Use a kitchen torch to caramelize until golden brown. Let cool for a minute before slicing.
- No kitchen torch? Place the cheesecake under the broiler for 1-2 minutes until caramelized (watch closely!).
