For the Buttercream Frosting:

- 4 cups powdered sugar
- 2 teaspoons vanilla extract
- 3 tablespoons heavy cream or milk
- Food coloring for the mane (pink, purple, blue)
For the Decorations:
- 1 golden fondant horn
- 2 white fondant ears with pink centers
- Edible pearls or sprinkles for extra magic
Instructions
1️⃣ Prepare the Cake Batter
- Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
- In a bowl, whisk together flour, baking powder, and salt.
- In another bowl, beat sugar, eggs, and vanilla extract until fluffy. Add the melted butter and mix well.
- Gradually add the dry ingredients, alternating with milk, mixing until smooth.
- Divide the batter into four bowls and color each with a few drops of pastel food coloring.
- Pour each color layer by layer into the cake pans for a rainbow effect. Swirl lightly with a skewer for a marbled look.
- Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Let the cakes cool completely before frosting.
2️⃣ Make the Buttercream Frosting
- In a large bowl, beat butter until creamy.
- Gradually add powdered sugar, mixing well.
- Add vanilla extract and heavy cream. Beat until smooth and fluffy.
- Divide into three small bowls, coloring each portion with pink, purple, and blue for the unicorn’s mane.
3️⃣ Assemble & Decorate the Unicorn Cake
- Place one cake layer on a serving plate and spread white buttercream frosting evenly.
- Stack the second layer on top and cover the entire cake with a smooth coat of white frosting.
- Use a piping bag with a star tip to create swirls of pink, blue, and purple buttercream for the unicorn’s mane.
- Attach the golden fondant horn in the center and place the fondant ears on either side.
- Add edible pearls or sprinkles for extra magic!
Notes
- For a taller cake, bake in three layers instead of two.
- No fondant? Use white chocolate pieces for the horn and ears!
- Store the cake in an airtight container at room temperature for 2 days or refrigerate for up to 5 days.
