Ingredients

Scale
  • 2 cups elbow macaroni
  • 2 cups shredded Pepper Jack cheese
  • 1 cup shredded Cheddar cheese
  • 1 cup milk
  • 2 tbsp butter
  • 1 tbsp all-purpose flour
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper (optional for extra spice)
  • 1/2 tsp garlic powder
  • Salt & pepper to taste
  • 1/2 cup breadcrumbs (optional for topping)
  • 1 tbsp chopped jalapeños (optional for extra heat)

Instructions

1️⃣ Cook the macaroni: Boil water, add a pinch of salt, and cook macaroni according to package instructions. Drain and set aside.

2️⃣ Make the cheese sauce: In a saucepan over medium heat, melt butter and stir in flour. Cook for 1-2 minutes until golden.

3️⃣ Add the milk: Slowly pour in the milk while whisking continuously to create a smooth mixture.

4️⃣ Melt the cheese: Reduce heat to low and stir in Pepper Jack and Cheddar cheese. Keep stirring until fully melted.

5️⃣ Season it up: Add paprika, garlic powder, cayenne pepper (if using), salt, and pepper. Mix well.

6️⃣ Combine pasta and sauce: Pour the cheese sauce over the cooked macaroni and stir until evenly coated.

7️⃣ Optional crispy topping: Transfer to a baking dish, sprinkle breadcrumbs, and broil for 2-3 minutes until golden.

8️⃣ Serve and enjoy!

Notes

  • For a smoky twist: Use smoked Pepper Jack cheese or add a pinch of smoked paprika.
  • Make it creamier: Add a little cream cheese for extra richness.
  • Customize the spice: Adjust the cayenne and jalapeños based on your heat preference
