For the crust:
- 1 ½ cups all-purpose flour
- ½ cup unsalted butter, melted
- ¼ cup granulated sugar
- ¼ teaspoon salt
For the filling:
- 2 large eggs
- ¾ cup granulated sugar
- 2 tablespoons all-purpose flour
- ⅓ cup freshly squeezed lemon juice
- 1 teaspoon lemon zest
- 1 cup fresh or frozen blueberries
For dusting (optional):
- Powdered sugar
Instructions
Preheat & Prepare:
- Preheat oven to 350°F (175°C).
- Line an 8×8-inch baking pan with parchment paper.
Make the Crust:
- In a mixing bowl, combine flour, melted butter, sugar, and salt.
- Press the mixture evenly into the prepared pan.
- Bake for 15 minutes or until lightly golden.
Prepare the Filling:
- In another bowl, whisk together eggs, sugar, flour, lemon juice, and lemon zest until smooth.
- Gently fold in the blueberries.
Assemble & Bake:
- Pour the filling over the warm crust.
- Bake for 20–25 minutes, or until the center is set.
- Let cool completely before slicing.
Serve & Enjoy:
- Dust with powdered sugar before serving.
- Cut into squares and enjoy!
Notes
- If using frozen blueberries, do not thaw them before adding to the filling.
- For extra lemon flavor, add an extra teaspoon of lemon zest.
- Store in an airtight container in the refrigerator for up to 4 days.
