Ingredients
Scale
- 1 lb boneless, skinless chicken breast or thighs
- 2 cups mixed vegetables (carrots, potatoes, onions)
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1 tbsp tomato paste
- 1 tsp dried thyme
- Salt and pepper, to taste
Instructions
- Brown the Chicken: Sear the chicken in a pan for extra flavor (optional).
- Sauté the Vegetables: Lightly cook onions, carrots, and potatoes until slightly softened.
- Layer Ingredients in Crockpot: Place chicken at the bottom, followed by vegetables, and pour in the chicken broth. Add tomato paste, garlic, thyme, salt, and pepper.
- Slow Cook: Cook on LOW for 6-8 hours or HIGH for 3-4 hours until the chicken is tender.
- Make the Gravy: Remove chicken, mash some vegetables into the broth to thicken, or mix a cornstarch slurry (1 tbsp cornstarch + 2 tbsp water) for a thicker gravy.
- Serve: Shred or slice the chicken and mix with the rich gravy. Serve over mashed potatoes, rice, or roasted vegetables.
Notes
- For extra flavor, use bone-in chicken instead of boneless.
- Prefer a creamier texture? Add ½ cup heavy cream or milk at the end.
- For a low-carb version, serve over cauliflower mash instead of potatoes.
- Storage: Keep leftovers in an airtight container in the fridge for 3-4 days or freeze for up to 3 months.
