For the Grilled Chicken:

  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • ½ tsp salt
  • ½ tsp black pepper

  • Juice of ½ lemon

For the Sweet Potato Mash:

  • 2 large sweet potatoes, peeled and cubed
  • 2 tbsp butter (or olive oil for a dairy-free option)
  • ¼ cup milk (or almond milk for dairy-free)
  • ½ tsp cinnamon
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions

1️⃣ Prepare the Sweet Potatoes

  • Boil sweet potatoes in a pot of salted water until fork-tender (about 15 minutes).
  • Drain and mash with butter, milk, cinnamon, salt, and black pepper until smooth.

2️⃣ Grill the Chicken

  • In a bowl, mix olive oil, garlic powder, paprika, salt, pepper, thyme, and lemon juice.
  • Rub the seasoning mixture over both sides of the chicken.
  • Heat a grill or grill pan over medium-high heat and cook the chicken for 6-7 minutes per side, or until fully cooked (internal temperature of 165°F).
