These cheesecake cookies combine the rich creaminess of cheesecake with the soft, chewy texture of cookies. They are easy to make, perfect for sharing, and absolutely delicious!
Ingredients
For the Cookie Dough:
- 2 ¼ cups all-purpose flour
- 1 tsp baking soda
- 1 tsp salt
- 1 cup granulated sugar
- ½ cup unsalted butter, softened
- 1 large egg
- 1 tsp vanilla extract
For the Cheesecake Filling:
- 12 oz cream cheese, softened
- ½ cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
Instructions
1️⃣ Preheat & Prepare: Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
2️⃣ Make the Cookie Dough: Cream together butter and sugar until light and fluffy. Add the egg and vanilla extract, then mix in flour, baking soda, and salt. Set aside.
3️⃣ Make the Cheesecake Filling: In a separate bowl, beat cream cheese, sugar, egg, and vanilla until smooth.
4️⃣ Assemble the Cookies: Scoop cookie dough onto the baking sheet, leaving space between each. Make a small well in the center and fill it with a teaspoon of cheesecake mixture.
5️⃣ Bake & Cool: Bake for 12-15 minutes until edges are golden. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
6️⃣ Enjoy! Serve as-is or dust with powdered sugar for extra sweetness.
Notes
- Chill the dough for 30 minutes before baking for better shape.
