Description

A creamy cheesecake meets a crispy caramelized sugar topping in this irresistible Cheesecake-Brûlée! With a buttery graham cracker crust and a smooth vanilla-infused filling, this dessert is perfect for impressing your guests. Whether for a special occasion or just because, this easy recipe will become your new favorite!

Ingredients

Scale

For the Crust:

  • 1 ½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • 5 tbsp melted butter

For the Cheesecake Filling:

  • 16 oz cream cheese, softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup heavy cream

For the Brûlée Topping:

  • ¼ cup granulated sugar (for caramelizing)

Instructions

1️⃣ Preheat oven to 325°F (165°C). Line a springform pan with parchment paper.

2️⃣ Prepare the crust: In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press evenly into the bottom of the pan. Bake for 8 minutes, then let cool.

3️⃣ Make the cheesecake filling: Beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in vanilla and heavy cream. Pour over the crust.

4️⃣ Bake: Place the pan in a water bath (a larger baking dish filled with hot water) and bake for 50-60 minutes, until the edges are set but the center is slightly jiggly.

5️⃣ Chill: Let the cheesecake cool completely, then refrigerate for at least 4 hours (overnight is best).

6️⃣ Brûlée topping: Before serving, sprinkle ¼ cup granulated sugar evenly on top. Use a kitchen torch to caramelize until golden brown. Let cool for a minute before slicing.

Notes

  • No kitchen torch? Place the cheesecake under the broiler for 1-2 minutes until caramelized (watch closely!).
  • Make ahead: Cheesecake can be made up to 3 days in advance and stored in the fridge.
  • Variations: Try adding a caramel drizzle, fresh berries, or a sprinkle of sea salt!
